Grandma's Sweet Potato Casserole Recipe, Gluten Free Option

- 1 large (40 ounce) can sweet potatoes, drained. Or cook your own; use 1½ cooked (1¾ raw, before peeling)
- ¼ c sugar (white)
- ½ tsp salt
- ¼ tsp nutmeg
- ¼ tsp cinnamon
- 2 eggs
- ¼ c (half stick, 50 grams) butter, melted
- 1 tsp vanilla extract
- Topping:
- ½ c chopped nuts
- ¼ c softened butter
- ¾ c brown sugar
- 3 Tbsp all-purpose flour, or gluten free flour
- Mash drained sweet potatoes.
- Add sugar, salt, nutmeg, cinnamon, eggs, butter, and vanilla, and mix well.
- Pour into a greased 3-qt. oven safe dish, set aside.
- For topping, crumble together nuts, butter, brown sugar, and flour.
- Spread evenly over casserole.
- Bake at 350° F for 45 minutes.
